A breakfast dish that can be prepared when you have time to spare.Though it involves a little extra work , help from one of your family members with the sevai press can create varieties for your breakfast. This can be stored for a day in the refrigerator and reheated [sprinke a little water]in the microwave or steamed in a pressure cooker for a few minutes.
When mom used to prepare this on holidays, she used to do the steaming and call me to help her with the sevai press. The idlis have to be hot while being put into the press cos when cold it will be difficult to work with .You will have to put in extra strenght to turn the press.[For those of you who have not seen a sevai press,I will put up a pic later ]. I would be too glad to help her out coz I know there will be a lovely spread for breakfast.Mom too would never mind the extra work and prepare it atleast once a week.

Nowadays,we get this readymade in some stores in South India. But nothing like homemade fresh breakfast, right…

  1. Soak 2 cups rice for atleast 5 hours and grind to a fine paste[idli batter consistency].
  2. Pour batter into greased idli moulds and steam till done.
  3. When these idlis are still hot put them into through a sevai press .
  4. Collect the sevai and use as required to prepare a variety of flavorful dishes.
