There are days when Lil Angel specifically asks for some dish.Though this is rare,meaning, she usually likes to have what the rest of us eat, but when she does ask I am over joyed.


One such joyous moment was when she wanted tomato soup with carrot. I tried to ask her the difference -if she wanted carrot soup or tomato soup, but she replied tomato soup with carrot. So I put both the veggies together and made this soup which she relished….

This soup is a good source of vitamins and a very healthy one too. And,there is not a drop of oil in this recipe!I did not stain the soup.You can do it if you don’t like bits of tomato in the soup…

I used :

Ripe and juicy tomatoes – 2
Carrot – 1, medium sizes
Coriander leaves-a few
Garlic- 2 pods
Salt to taste
Freshly cracked pepper to taste
Mint leaves to garnish

  1. Pressure cook roughly chopped tomato and carrot along with a little coriander leaves and garlic pods.[Add a little water to the vessel in which the vegetables are being cooked and cook for 10 minutes or till carrots are soft.]
  2. Once the pressure releases, remove from the pressure cooker and allow to cook.Puree the mixture.
  3. Heat the puree in a pan.Add water to get the desired consistency
  4. Serve hot / warm with salt and a dash of freshly cracked pepper, garnished with mint leaves.
