The second week of Blogging Marathon # 35 starts today and I have chosen healthy recipes. Today’s post is a simple soup recipe from my backyard!


The Drumstick tree is laden with produce and there are so many drumsticks hanging there that even after distributing them off to the neighbours, we still have a whole lot left behind! We left some on the tree and after a few days they kinda turned’woody’ to be used in gravies / dhal. So I made soup with it – a clear soup, so that we can still enjoy the health benefits yet need not bite into the woody parts…

Drumstick tree on the whole is said to have a whole lot of health benefits.Drumstick has anti bacterial properties and is said to be helpful in prevention of infection of the throat, chest and lungs. This is the season when we all fall sick and I felt this soup is really apt for the theme – Healthy recipes….

I used:

Drumsticks-3,cut into 2 inch pieces
Onion-1 roughly chopped
Tomato-2 roughly chopped
Garlic-3 pods, chopped
Coriander leaves- a handful
Maggie seasoning cube-1, dissolved in a little water
Freshly cracked peeper and salt to taste

1. In a pressure cooker take the drumstick, tomato, onion, garlic, coriander leaves ,2 cups of water and pressure cook for 3 hisses / 10 minutes.Once the pressure releases, scoop out the flesh of the drumstick . Drain the remaining water from the pressure cooker and keep aside.Do not discard it.

Grind the drumstick pulp, tomato, onion, garlic and coriander leaves to a pulp.

2. Put this into a strainer and add the reserved liquid and stain the clear soup.Add more water if needed.

Heat a pan and add the stained clear soup. Put in the seasoning cube mixture and bring to boil.

3. Add salt and pepper to taste. Remove from heat once it comes to a rolling boil.

Serve hot garnished with a little coriander leaves…

Note:

  • If you have vegetable stock, use it instead of the seasoning cubes.
  • You can add more or less of onion, tomato and drumsticks.
  • Mint can be used instead of coriander leaves.

We enjoyed this with a few Masala Pappads…

  1. That is one mouthwatering cup of soup! My uncle had couple of drumstick tress in there house and I know what you mean by laden of produce.. ๐Ÿ™‚
