Raita is one of my favorite sides and try to make as many varieties as possible. This is one such raita that is tasty as well as healthy.

Palak / Spinach is loaded with Iron and it is said that 100 grams of this leafy vegetable meets 25% of the daily Iron requirement of the body. And also spinach has several anti oxidants like Vitamin A and C, flavonoid  poly phenic anti oxidants like lutein, zea xanthin and betra carotene.

And the yogurt used in this recipe is a body coolant and a good source of Calcium. So what is not to like in this simple dish!

I used:

Palak / spinach leaves- 10 number, washed ,pat dried and finely chopped
Fresh yogurt- 2 cups
Mustard seeds- 1 teaspoon
Cumin seeds- 1/4 teaspoon
Red chili-2 .broken
Oil- 1 teaspoon
Salt to taste

Heat oil in a pan and add the mustard, cumin and red chilies. Once the mustard pops, add the palak/spinach and saute lightly till it starts to wilt. Remove from heat.

Whisk yogurt with a little salt. Add the sauteed palak and mix well.

Serve as a side with Roti or flavored rice

This super easy and Iron rich recipe is off to Srivalli’s Kid’s Delight Event, hosted by Kalyani with the Theme – Iron rich recipes…

Also gracing this event are the super tasty Eggless Dates Cake    and this yummy Ragi Semiya Kheer  from my kitchen, both of which were a hit with the kids….

Bon Appetit…
