Pasta is one of those things that the kids never say no to. So when it is time to make their weekly dose of pasta, I try to make something different in a way that I can put in something healthy into the  dish without drawing too much attention.


One such experiment was this pasta with a spinach puree which both the kids loved and ate without a fuss mainly due to the bright green color.

This is my first post for Blogging Marathon #46, week 2, Day 3 under the themePasta/ pizza/ noodles for kids.

I used:

Pasta- 200 grams
Spinach puree – 1 cup
Colored capsicum,finely chopped- 1/4 cup
Onion-1, chopped
Ginger garlic paste- 1 teaspoon
Milk-1/4 cup mixed with 1 teaspoon corn flour
Sambar powder- 1 teaspoon
Salt to taste
Oil- 1 teaspoon
Grated cheese to garnish

Heat a large pan with plenty of water. Add a teaspoon of salt and oil and bring to boil. Put in the pasta and cook till just done [al dente].Remove from pan and put into a bowl of cold water, drain and spread on a plate. Leave aside.

Heat oil in a pan and add onion, ginger garlic paste and saute till the onion is soft. Add the bell pepper and saute for a minute. Put in the spinach puree and cook for a minute.

Add the milk-cornflour mixture, a little water if the mixture is too thick. Add the sambar powder and salt and mix.Add the boiled pastas and mix well to coat.

Serve immediately garnished with a handful of grated cheese.

Note:

  • You can use any other spice mix instead of sambar powder like garam masala,red chili powder etc. You can also skip it.
  • The sauce thickens on standing. Dilute it with a little hot water if needed. Also if not serving immediately, prepare the sauce and keep aside.add the pasta just before serving,toss well and serve.
