I rarely make cakes with creamy frosting. Its either a cake served as such or the favorite Chocolate frosting / ganache.The kids don’t really ask for frosting but I have always been wanting to make at least one creamy frosting for the cake.


So when I was baking for the Fire Up The Oven series, I made this Cream cheese frosting for the Eggless Butterless Red Velvet Cake.

I don’t find cream cheese in the store very often and even if I see it, its pretty expensive!!! So I searched the web and found this easy method to make cream cheese and the frosting.



I used:


For the cream cheese

Homemade paneer – From 1 litre milk
Yogurt- 1 tablespoon

Take the paneer and yogurt in a blender jar and whip till smooth and whisk till creamy.Transfer it into a cheese cloth and tie the ends together and hang it in place to let it drain. Let it drain for 4-5 hours.

To make the frosting

Cream cheese from the above method
Butter -30 grams

Powdered sugar -1 cup
Milk-1 tablespoon

Take all the ingredients in a bowl and whisk well till you get a creamy consistency.

You as a topping/frosting for cakes…

Note:

  • You can use a drop or two of vanilla essence while making the frosting. 
  • To make chocolate cream cheese frosting, add a tablespoon of cocoa powder.
  • The frosting was a bit sweet to my liking,but the kids loved it.So adjust the sugar accordingly.
  • If the mixture is very thick, add a little extra cream or milk in the final step and whisk well.

  1. I love cream cheese frostings because they have the tang and are not as buttery as the buttercream frosting. Your cupcakes with the frosting look sooooo yummy!!
