Today, I am moving on to a classic American combo- Brownie and Ice cream.


For the past few months, the box that housed the All purpose flour is
now occupied by other ingredients. I enjoy baking so now its
incorporating more of healthier ingredients into what we like.

I already have eggless  Adzuki bean brownie, Eggless Eggless Chocolate Fugde Brownies , Eggless cream biscuit browines and now it is time for my favorite ingredient to show up.So here is one with Oats and a light coffee flavor.

So, along with these brownies, I made a rose flavored ice cream that is super simple but very delicious.

When
ever I think of brownies and ice creams, it takes me back to the time
when we met for the 50th edition of BM celebrations in Chennai and
Srivalli had arranged for a surprise dinner for us and one of the items
on the menu was Brownie and Ice cream.

It was a lot of
fun and I was busy chatting and the only other thing that kept my kiddo
out of my hair are these two things!!! If you are wondering what the
other one is, it is Srivalli’s kids who kept my kid engaged and
entertained all through dinner.So it is something I can never forget…

After all this nostalgia, it is time to see the recipe,right….

I used:
Makes- 2 small pans of brownies

Whole wheat flour- 1 cup
Oats- 1/2 cup, measure and powdered
Sugar, powdered -3/4 cup
Cocoa Powder- 4 tablespoons
Instant coffee powder- 1 tablespoon[I used Bru instant]
Baking soda- 1 teaspoon
Salt- 1/4 teaspoon
Yogurt-1 cup
Oil-1/4 cup
Chopped nuts- 1/4 cup [I used cashews, almonds and pistachio]
Chocolate chips as needed

Take the wheat flour,instant coffee powder, powdered oats, sugar, cocoa powder,baking soda, salt in a bowl and whisk the ingredients to combine.

Take yogurt and oil in another bowl and whisk well.

Add the yogurt mixture to the flour mixture ,mix, add the  nuts and mix gently. Do not overmix. Pour into greased pans and sprinkle the chocolate chips on top. Bake in a preheated oven at 180 degree C
for 15 minutes/ till a toothpick, when inserted in the center comes out clean[Oven timings will vary]

Remove from oven.When it cools invert onto a wire rack and cut after it has cooled completely.

Relish the brownies with some rose flavored ice cream or any ice cream of your choice.

  1. That classic combo and you have managed to have your twists to it..the brownie looks sinful and with such healthy ingredients, I am sure we can indulge more!
