This is the side dish that  is served with the famous chur chur parathas and yes, this too like the recipe for potato gravy, was shared by Vaishali.


I literally fell in love with this dish for its awesome taste and it complimented the paratha so well. I licked the bowl clean and I am sure this is going to be my new favorite that will feature in my kitchen often henceforth.

Pumpkin / kaddu / squash – 1 cup,cubed
Mustard- 1 teaspoon
Kalinji / Nigella seeds- 1/2 teaspoon[optional]
Red chilies- 2
Asafoetida powder- a pinch
Red chili powder- 1 teaspoon
Coriander powder- 1 teaspoon
Sugar-1/2 teaspoon
Turmeric powder- a pinch
Amchur powder / Raw mango powder- 1/2 teaspoon
Salt to taste
Coriander leaves
Ghee- 1 teaspoon

Heat ghee in a pan and add mustard, nigella seeds, asafoetida powder.When the mustard splutters, add the cubed pumpkin, spice powders, salt.

Saute for a few seconds and add 1/2 cup water and bring to boil.Cover and cook till the pumpkin is cooked.Mash gently with the back of the ladle. .Add a little water to get the right consistency.It should not be a smooth paste though.Before taking off the heat, put in the amchur powder,coriander leaves and mix.

Serve this with  Chur Chur Parathas
