This easy to make Chocolate peppermint pudding has been adjudged the best pudding by the kids!


While making this one, the kids were in the kitchen trying to have a glimpse of what I was preparing.Once the chocolate melted and the peppermint essence was added , the whole house seemed to land on a magical island!

Lil Angel took a spoonful even before it cooled down to do a taste test. She savored it slowly and closed her eyes. I was sure she loved it. ‘At first the chocolate hits you and then the peppermint gives you such a refreshing feel in your mouth’, she said in total Master Chef style!What better compliment can I ask for!!

The toughest part was waiting for it to cool so that we can actually indulge on the treat. It tasted so much yummier than the first taste test.

I have used coconut milk and unrefined cane sugar in this recipe.You can always substitute it with milk and regular white sugar.

A simple and east dessert!

Course: Dessert
Servings: 3 servings

Ingredients
  • 2 tablespoons Cornflour
  • 1/4 cup Unrefined Cane Sugar
  • 2 teaspoons Cocoa Powder
  • A pinch Salt
  • 1 1/2 cups Coconut milk
  • 1/4 cup Chocolate Chips
  • A few drops Peppermint essence
Instructions
  1. In a pan take the corn flour,salt, cocoa powder and unrefined cane sugar.Whisk well to mix

  2. Slowly add coconut milk and whisk well so that there are no lumps

  3. Put the pan on the stove and simmer.

  4. Once it starts thickening, remove from heat and add the choco chips and whisk well so that the chocolate melts.

  5. Return the pan to the stove and simmer once again

  6. A a few drops of peppermint essence, whisk well and remove from heat. The mixture would have thickened by now

  7. Transfer into a bowl / serving dish and refrigerate for at least half an hour.

Recipe Notes
Note:
  • You can use regular sugar and milk instead of unrefined cane sugar and coconut milk
  • Add the peppermint essence drop by drop.Certain brands may be strong and it will spoil the taste of the dish.Add a drop or two in the beginning, do a taste test and add more if required.
  • The pudding will thicken further on cooling.
  • If it is too thick at the end of the cooking time, add a little coconut milk. warm water and whisk well before chilling it.

Step by step Tutorial to prepare Chocolate peppermint pudding:

Take the corn flour, cocoa powder, unrefined cane sugar and salt in a pan.Whisk well.Add coconut milk and whisk well so that there are no lumps.

Place the pan on the stove and simmer, whisking slowly.Once it comes to a boil, remove from heat and add the chocolate chips. Whisk till the chocolate melts.

Return the pan to the stove, simmer again.Add a few drops of peppermint essence [see note below] and mix well. Once the pudding thickens, remove the pan from the stove. Pour into serving bowls. Chill for at least half an hour before serving.

Chilled chocolate peppermint pudding is ready to be savored…
