There was a time when I used to make quick mug cakes like this Eggfree 1 Minute MW Mug Brownie. Though I haven’t made brownies, I used to make one or the other types of mug cakes.


These were highly appreciated especially by mom and the kids and that kinda motivated me to make more of these quick bites.

Then there was a lull and this stopped completely as I went on to bake the regular cakes and cookies. Though my folks liked those bakes, I missed these quick fixes.

After a long time, I made a couple of varieties of mug cakes and we enjoyed it with our evening tea.

Technically, this is supposed to be done in a 200ml mug. But I tweaked up the ingredients and made this as smaller portions. You can make this as a single serve instead of making it for 3.

This is my first post for Blogging Marathon #76, Week 2, Day 1, with the theme – Sweets for Mother’s day.

This one is especially for her coz she loves small portions of eggless cakes and I have made it a bit healthier by using whole wheat flour and unrefined cane sugar.

Step by step method to make Eggfree 1 Minute MW Mug Brownie:

I used:

Whole wheat flour- 3 tablespoons
Unrefined cane sugar- 3 tablespoons
Cocoa Powder- 3 tablespoons
Vegetable oil- 3 tablespoons
Water – 4 tablespoons
Salt- a large pinch
Chocolate chips as needed

Take the flour,cane sugar,cocoa powder in a  bowl and add oil.

 

Add water, salt and give it a mix. Divide the batter between three 50ml cups

 

Add chocolate chips on top and microwave on high for one minute.Let it sit in the microwave for another minute. Remove from oven and serve.

 

Quick and easy Microwave brownies are ready to be served.
