Eggless Chocolate Peanut Butter Cupcake Recipe with step by step pictures


Today is the final day of Bakeathon and I can hardly believe that I have completed the series! 13 baked recipes! It wouldn’t have been a feat when I did it every year in the past. I would generally have at least a couple of recipes ready to start with.

But this year, I was not so sure about joining until I posted the first one!Many recipes in this series were baked and posted on the same day!

Amidst my classes, kids exams and vacation and we taking turns in falling sick one after the other,it looks like a feat for me to have completed this event!

So here is the final recipe in this series- Eggless Chocolate Peanut Butter Cupcake Recipe.Here too I have used the Basic Eggless Vanilla cake recipe and the cakes turned out to be super tasty!

Eggless Chocolate Peanut Butter Cupcake

A delicious cupcake with a chocolaty peanut butter flavor

Servings: 16 Cupcakes
Ingredients
  • 1 1/2 cups All Purpose flour , sifted
  • 3/4 cup Powdered sugar
  • 1 cup Thick Yogurt
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking Soda
  • 1/2 cup Oil
  • 2 teaspoons Cocoa Powder
  • 1/2 cup Peanut butter
Instructions
  1. Add the sugar to the curd and mix till it dissolves.

  2. To this mixture ,add the baking powder and baking soda. Mix and leave aside for a few minutes

  3. Once you see small bubbles on the surface, add the oil and the essence and mix well.

  4. Into this mixture add the all purpose flour and cocoa powder little by little and mix .

  5. Now add the peanut butter and mix

  6. Line a muffin tray with paper liners 

  7. Fill the liner 3/4 with the batter and bake at 180 Degree C for 12-15 minutes / till a skewer inserted in the center comes out clean.

  8. Remove from tray and let it cool on a wire rack

Recipe Notes
  • The number of cupcake got from this recipe will vary with the size of the muffin tin / liner used.
  • The quantity of sugar can be adjusted.
  • You can use any other sweetener like powdered jaggery, cane sugar etc.
  • The baking time may vary on the size of the cup cake
  • This can be baked in a square / round tin as well.
  • The cup cakes are very soft when taken out of the oven.Wait for a few minutes and then transfer them to a wire rack gently.

Step by step method to prepareย Eggless Chocolate Peanut Butter Cupcake Recipe

Take sugar and curd in a bowl,mix till sugar dissolves. Add baking powder and baking soda and stir. Set aside for a few minutes till it bubbles and becomes frothy. Add oil and mix well.

Add flour and cocoa powder little by little. Mix. Then add the peanut butter and mix well.

Line a muffin tray with liners and fill it with 3/4 of batter.Bakeย  in a pre heated oven at 180 degrees for 12-15 minutes / till a skewer inserted into the center comes out clean. Remove from oven and transfer to a wire rack to cool.

Soft and deliciousย Eggless Chocolate Peanut Butter Cupcake is ready to be served!

  2. I would’ve gone on a panic attack if I were you! Peanut butter is a lovely flavor… I had baked a cake early this month and it was loved… planning to make them again for our New Year outing, since it comes together quite easy… and then with chocolate, everything is a winner!

  3. Some how I have an aversion to peanut butter, but recently I tasted Veeba’s peanut butter and that tasted awesom. I’ll try your these muffins with that peanut butter and I’m sure they will taste good.
