Eggless Orange Cranberry Cookies Recipe with step by step pictures.
I haven’t baked much with orange and a while back there were quite a few recipes with orange in them. Orange juice, orange rind or orange essence seemed to be the star of those bakes.
Though I had oranges in the fruit basket and could have easily used fresh OJ and the rind, I opted to use the essence! Yes sometimes, I am hard to judge!
So with the Eggless Basic Cookie dough in hand, the task seemed like a breeze. The cranberries that I have been rationing in bakes came into play here and the cookies turned out so flavorsome!
A simple and flavorful cookies that is very easy to prepare
- 200 grams Basic eggless cookie dough
- 1 teaspoon Orange essence / adjust to taste
- 2 tablespoons Dried cranberry , chopped
Mix the orange essence and chopped cranberry into the dough and shape into a log. Cling wrap the log and keep in the refrigerator for at least half an hour.
When ready to bake, remove the cling wrap and cut into even sized slices.
Place these slices on a baking tray lined with parchment paper and bake in a pre heated oven for 10-12 minutes / till teh bottom turns light brown
Remove from oven and cool in a wire rack. Store in an air tight container till ready to serve.

Step by step method to prepare Eggless Orange Cranberry Cookies Recipe
Take the Eggless Basic Cookie dough and add orange essence and chopped cranberries. Mix to combine.Shape into a log and wrap in a cling film and refrigerate for atleast half an hour. I left it as such and baked it after 2 days!
When ready to bake, remove the cling film and cut the cookie log into slices of even thickness. Place them on a baking tray lined with parchment paper. Bake in a pre heated oven at 180 degree C for 10-12 minutes / till the bottom is light brown. Remove the cookies and place them on a wire rack to cool. The cookies will be soft but will turn crisp on cooling.
