This Vegetable Kurma Recipe is one of the favorites at home! It is so simple to make and tastes really good when paired with Roti / Chapathi.

There is no fresh cream involved but this Vegetable Kurma Recipe tastes really thick and creamy! And the credit goes to the melon seeds and poppy seeds used in this dish!

This one is mildly spice but you can increase the quantity of red chili powder for a spicier version.

Step by step method to prepare Vegetable Kurma Recipe

Soak the melon seeds and poppy seeds for a couple of hours. Drain and grind to a fine paste adding a little water. Meanwhile parboil the vegetable, drain the water and keep aside.We can use the water used to cook the vegetables in the gravy.

In a pan add a little oil and saute onion, garlic, ginger,cinnamon,capsicum toll the onion is soft. Now add the ground paste ,the vegetables.

Add red chili powder,salt and a little of the reserved water used to cook the vegetables. Simmer for a couple of minutes and remove from heat.

Serve garnished with coriander leaves.

Note:

  • Adjust the spice level to suit your taste.This one is very mildly spiced.
  • Sometimes I add one finely chopped tomato after the onions are sauteed and cook till it turns mushy.Then I add the ground paste.
  • Adjust the consistency of the kurma with the reserved water. Add less/ more according to your preference.
  • I usually use chopped carrots, beans, potato, cauliflower,peas.
  • 1 Teaspoon of garam masala can be added with the ground paste.

Ingredients
  • 2 cups Mix vegetables,chopped
  • 2 tablespoons Melon seeds
  • 1 teaspoon Poppy seeds
  • 1 number Onion,Chopped
  • 2 cloves Garlic, finely chopped

  • 1 number Capsicum,small
  • 1 teaspoon Red chili powder
  • Salt to taste
