This Eggless Christmas Fruit Cake Recipe [ Using Mincemeat] recipe dates back to exactly the same time last year!! No, no, it hasn’t been in my drafts for that long!


Last year Suma posted a mincemeat for cakes and I was so smitten by its simplicity. Later she also used this in one of her cakes.

Just like always we were doing posts for bakeathon and I wanted to try out her fruitcake.So immediately I set off to make the mincemeat. It turned out so good and delicious that I wanted to eat all of it just like that!!

I resisted as much as possible and stored it in the fridge till I could make the cake. I kept putting off baking for one reason or the other and the mincemeat stayed in the fridge!!

The mincemeat not only stayed in the fridge but also in my mind. So I wanted to make a cake for Christmas using this mincemeat and I took it out with a lot of trepidation!

The moment I opened the box,the aroma filled enticed me and I was so surprised that it stayed good do long!!Suma mentioned in her post that it is best to use this up soon and if made with alcohol it can be allowed to mature and used when needed.

In case you are going to store it for a long time, do check if it is still edible and then proceed with the bake.

I am sure you are wondering  what mincemeat is doing on this blog,Yes!? Then read ahead…

Mincemeat though usually refers to mince or ground meat, it also denotes a mix of dried fruit and spices soaked in spirits. It also contains beef, venison and beef suet. Originally mince meat always had mincemeat.

This version here has only dried fruits that are soaked in fruit juice!

Coming to the taste – I was in for a pleasant surprise! I gave mom a piece and she really thought I had got her a plum cake from the bakery! The taste and aroma was so good and so similar to the store bought plum cake we get around here!

Do try this out and I am sure you will be baking this every year!!

Step by step method to prepare mincemeat.

Take the orange juice and grated orange rind in a pan. Add the dried fruit mixture.Cook the mixture

Add butter, cinnamon powder, brown sugar and mix well. When the fruits plump up and there is still some orange juice left, remove from heat. Store in a container and use as needed.

For the cake – Take the flour, flaxmeal, sugar and cocoa powder in a bowl. Add salt, cinnamon powder, ginger powder and baking powder. Whisk well to combine.

In another bowl, take milk, oil, vinegar and the micemeat.Mix well.

Add this to the dry ingredients. Mix and transfer to a loaf pan. Top it up with more dried fruits and bake in a pre heated oven @ 180 degrees for 45 minutes / till a skewer comes out clean when inserted in the center. Remove from pan and cool in a wire rack.

Slice and serve when it has cooled down completely.

Note:

  • I used a mix of tutti frutti, melon seeds, broken cashews,dried black currants, raisins to make the mincemeat.
  • I used whole wheat flour in this recipe .You can also use APF / Maida.
  • The sweetness was just right for us.
  • The cake was a little dense but the taste was awesome!

Another version of the Christmas fruit cake that tastes exactly like the store bought one!!

Course: Dessert
Ingredients
  • For the mincemeat
  • 1 cup Orange juice
  • 2 teaspoons Orange zest
  • 1 cup Dried fruits and nuts
  • 1 tablespoon unsalted butter
  • 2 Tablespoons Brown sugar
  • 1/4 teaspoon Cinnamon powder
  • For the cake
  • 1 cup Whole wheat flour
  • 2 teaspoons Cocoa powder
  • 6 teaspoons Cane sugar
  • 1 tablespoon Flax meal
  • 1 teaspoon Baking powder
  • A pinch Salt
  • 1/4 cup Milk
  • 1/4 cup Oil
  • A few teaspoon Tutti frutti to sprinkle on top

    That is such a lovely fruit cake recipe. I didn’t make a fruit cake this year because I didn’t feel like it. But if I had seen your recipe earlier I would have made it right away. Pinned to try next year for sure.
