Most of you are aware that I love rice based dishes and this is a category that everyone at home looks forward to and also enjoys. So for V for Vietnam in our 30 day Culinary journey across the globe ,I made this red rice that is so simple to put together but the flavor is so good.Even the kids loved this one! I served this with a Sweet and Sour Tofu Curry


I used:

Rice- 1/4 cups
Shallots- 5, peeled and finely chopped
Garlic- 1 large clove, grated
Tomato paste-2 teaspoons
Soy sauce- 1 teaspoon
Salt to taste
Oil- 1 teaspoon

Cook the rice as you normally do, adding a little less water so that the grains are separate. Spread on a plate and put it in the fridge to cool for at least half an hour.

Heat oil in a pan and add the shallots and garlic. Saute for a minute or two till it softens.Add tomato paste and cook for a minute.If the mixture is too dry add a teaspoon of water.Add the chilled rice, soya sauce,salt.Mix well.

Serve hot garnished with spring onion greens..

Note:
I think the reason to chill the rice is to make the dish non soggy/ clumpy.So left over rice should also work well.
