One of the first cakes that I baked for this Bakeathon is this one from Srivalli’s blog.At first I was a bit skeptical about baking honey but trusting Srivalli’s recipe, I went ahead and I now I am getting repeat requests for this cake! This is super moist and delicious and smells and taste of honey just like the name suggests!

The last jar of honey that I got on a promo sale – buy one get one free, was put to good use with this recipe.

I made this one night when I was feeling really bored and wanted to do something nice. Naturally, the first thing that came to my mind was baking for the Bakeathon. I checked my bookmarks and my eyes fell on this recipe. And before long the whole house smelt divine!

The kids were so eager to taste this cake and they were ready even ready to fore go dinner! So I suggested they finish dinner and then eat as much of the cake as they like. Now, this was something I should not have said! The kids polished off all but the 4 cupcakes that you see in the pics!!I was so happy to see them indulge and even more happier when Lil Angel mention that I was best!

I used:
All purpose flour /Maida- 1 cup

Corn flour – 2 tablespoons

Honey – 1/ 2 cup
Yogurt,thick – 1/2 cup

Oil – 1/2 cup
Baking powder – 1 tablespoon

Baking soda – 1/2 teaspoon
Chocolate chips- 1/2 cup + to garnish

Sift together maida, corn flour, baking powder and baking soda twice. In a bowl take curd, oil and beat well. Add honey and beat well.Add the flour mixture in batches into the liquid mixture.

Mix gently.  Add the chocolate chips and mix gently one more.Pour into prepared muffin tins and bake top with a few more chocolate chips.

Bake in a pre heated oven at 180 degrees for 15 minutes. Once the cake is done, remove from oven and let it cool on a wire rack .

The honey yogurt cake is ready to be served….

And a glimpse at the texture…

Bon Appetit…
