A few weeks back one
of my favorite animated movie – Snow White and the Seven Dwarfs was on TV. This actually the first animated movie that I remember watching in a theater. My parents took me to see this movie in the sole theater that showed English movies!


I fell in love with all the characters in this movie and I still talk about it given a chance. I was so desperate to make something from this movie and then landed on this soup idea..

his is the second post for Blogging Marathon #54,Week 3 for Srivalli’s Kid’s delight event with the theme – Cooking from Kids story books / TV shows that I am hosting here this month…

 

 The idea came when I saw the cute little snow white cook meals for the dwarfs. In a scene, she tastes something from a pot which looks like soup / stew. Hence the soup idea for this post!!! Since the
 little girl is an accomplished cook, I figured she would have served it in a fancy way and hence the paneer balls 🙂

 
 I used:
For the soup:
Onion-2 large, sliced
Cumin seeds- 1 teaspoon
Ginger,grated- 1 teaspoon
Garlic-2 cloves,grated
Vegetable stock-2 cup / as needed
Kashmiri Chili powder- 1 teaspoon
Corn flour- 1 tablespoon whisked in 1/2 cup stock / water
Oil- 1 teaspoon 
Oregani-1/2 teaspoon
Salt to taste
For the paneer balls:
Fresh paneer- 1/4 cup
Finely chopped mint and coriander leaves- 1 tablespoon each
Freshly cracked pepper- to taste
Salt to taste
Let’s make the paneer balls first…
Take the ingredients in a bowl and mix well to combine. Make small balls and steam them for a couple of minutes. You can also use them as such, but on steaming they hold the shape better.Keep aside once done.

Heat oil in a pan and add the onion, ginger, garlic and saute till the onion turns brown.Add a cup of teh stock and let it come to a boil. Cool ,strain and puree the onion,reserving the stock.

 Return the puree to the pan with the stock used to cook the onion and add extra stock if needed and mix. Add chili powder and salt.When it comes to a boil, simmer and add the corn flour slurry,mixing well so that lumps are not formed. When the soup thickens, add oregano and remove from heat.Serve the piping hot soup with a few paneer balls.
 

 I had this for dinner with a capsicum and panner stuffed braided bread…

  1. I have yet to figure out the difference between curds, fresh paneer and cubes of paneer. Can you help?
    I imagine that curds are yoghurt and cubes come from a tofu-like substance.
