I am watching the news on TV as I write this post. The scenes from
the flooded Chennai is being telecast and it is a scary situation out
there. I have a lots of friends and relatives there and hearing about
the condition there through them breaks my heart.And it is said that the rains
will continue for another 3 days!!Mother nature is angry for sure…


Sending out prayers for all in Chennai. Praying that the situation gets better and things get back to normal soon.

Though I really don’t feel like blogging right now, I am putting up this post today as I have signed up for Srivalli’s Bakeathon event. Just like last year, we will be posting baked dishes on Mondays, Wednesdays and Fridays this whole month.

The first post is a simple cake recipe which is really very light and fluffy and absolutely delicious. I made these cupcakes this evening and now nothing remains! The kids loved it so much and the surprise of all was hubby having 2 of these cupcakes!!!He is a person who is into spicy and savory things and he eating cupcakes is really rare and a second helping sure speaks volumes of this cake!

Without further ado, let me take you through the recipe…

I used:
Adapted from Kirbie’s Cravings

Homemade Cake flour – 1 cup

Sugar- 1/4 cup
Baking powder- 2 teaspoons
Baking Soda-1 teaspoon
Thick yogurt- 3/4 cup
Oil- 2 tablespoons
Vanilla essence- 1 teaspoon
Chocolate chips  – as needed

Take the cake flour in a bowl.See the note below on how to make cake flour at home

In another bowl, take the yogurt and add sugar and whisk till it dissolves. Put in baking soda and baking powder, vanilla essence and oil.

Mix gently. Add this mixture to the cake flour and mix to just combine.Do not over mix. Pour into a tray with cupcake liners and top with chocolate chips. Bake in a pre heated oven at 180 degrees for 15-20 minutes/ until a cake tester inserted into the cake comes out clean. Remove from the tray and transfer to a wire rack. Let it cool.

Delicious cupcakes are now ready to be served..

Note:

  • To make homemade cake flour- take a cup of APF and remove 2 tablespoons of flour. Add 2 tablespoons of corn flour mix well/ sift them together.
  • Be sure to use thick yogurt.I used homemade yogurt made from Aavin milk .
  • The cake was only mildly sweet. Add a little more sure if you have a sweet tooth.
  • Chocolate chips are optional.

  1. I know, for the past few days all the Indian news channels and social media is flooded with news of floods & rain in Chennai. Cupcakes look soft & moist.

    I can totally understand your feelings. I too feel the same as Chennai is my Hubby's place. Though we are here, most of his relatives are there. They are all safe now. Still to see other's suffering, it hurts. Hopefully things get better soon.
