Quick Beans Stir Fry with Kholapuri Masala

A quick curry with Maharashtrian flavors!

Ingredients

  • 250 grams Fresh Green Beans finely chopped
  • 1 tablespoon Oil
  • 1 number Onion Finely chopped
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Channa dal
  • 2 numbers Red chilies broken
  • 2 tablespoons Kholapuri Masala [adjust to taste]
  • Salt to taste
  • Curry leaves a few

Instructions

  1. In a pressure cooker, heat oil and add mustard and channa dal.

  2. When the mustard pops, add the curry leaves, red chilies and onion. Saute till the onions turn translucent.

  3. Add the chopped beans,kholapuri masala, salt and a tablespoon of water. Mix well.


  4. Cover and pressure cook for 1 whistle. Wait for the pressure to come down.

  5. Open the cooker and give a stir. Remove onto a serving bowl.

  6. Serve as a side with lunch.

Recipe Notes

  • The cooking time will vary. But a whistle or two is more than sufficient to cook this quantity of beans.
  • Adjust the masala to suit your taste
  • If there is a little water remaining in the cooker, cook the curry [without the lid] till the water evaporates.
  • The same curry can be made in a pan too. But it will take longer to cook this way.
