Simple Vegetable and peanut Rice

Ingredients

  • 1/2 cup Raw peanuts
  • 1 cup Rice
  • 1/2 cup Mixed vegetables Chopped and boiled
  • 1 number Onion sliced
  • 1 teaspoon Mustard
  • 1 teaspoon Urad dal
  • 1 teaspoon Channa Dal
  • A few Curry Leaves
  • 2-3 tablespoons Spice mix of your choice see note
  • To taste Salt
  • 1 tablespoon Oil

Instructions

  1. Cook the rice as you normally do and spread it on a plate to cool.
  2. Soak peanuts for an or two and pressure cook with enough water and a little salt.Drain and discard the water used to cook it. Keep the cooked peanuts aside.
  3. Heat oil in a pan and add the mustard, urad dal and channa dal.
  4. Once the mustard pops and dal turns brown, add the curry leaves and onion. Saute onions till soft.

  5. Add the cooked vegetables and boiled peanuts
  6. Then add the cooked rice,salt, your choice of spice mix.Mix well and let it cook on low flame for a minute or two.
  7. Remove from pan and serve with a side of your choice.
