1 minute microwave vegan wacky cake
A quick vegan bake to satisfy those sudden cravings!!

Ingredients

Whole wheat flour

Cane sugar

Cocoa powder

Instructions
Take the flour, cane sugar,cocoa powder and baking soda in a bowl and mix well.Make 3 small wells [depressions] in the flour.
Put vanilla essence, oil and lemon juice into the depressions and top it up with water. Mix well.
Divide it between 4 muffin cups / one large coffee mug.
Microwave on high for 1 minute / till done.
Serve as such / topped with chocolate chips, colored sugar / ice cream / chocolate sauce.
Recipe Notes
Whole wheat flour and cane sugar can be replaced with APF and regular sugar
Lemon juice can be replaced with vinegar.
You can do the mixing in the mug itself.I wanted small portions so mixed in a bowl and divided it in muffin liners.
This cake rises a lot so fill only till half of the cup / mug.
I used sunflower oil. You can use canola oil / rice bran oil or any other flavorless oil.
The cooking time will vary. Check after 50 seconds. It may take up to 2 minutes / more if baking as a single serve in a large coffee mug.
