1 minute microwave vegan wacky cake

A quick vegan bake to satisfy those sudden cravings!!

Ingredients

  • 5 tbsp Whole wheat flour
  • 4 1/2 tbsp Cane sugar
  • 2 tsp Cocoa powder
  • 2 tsp Vegetable oil
  • 1/4 tsp Vanilla essence
  • 1/2 tsp Lemon juice
  • 4 1/2 tbsp Water
  • 1/4 tsp Baking soda

Instructions

  1. Take the flour, cane sugar,cocoa powder and baking soda in a bowl and mix well.Make 3 small wells [depressions] in the flour.
  2. Put vanilla essence, oil and lemon juice into the depressions and top it up with water. Mix well.
  3. Divide it between 4 muffin cups / one large coffee mug.
  4. Microwave on high for 1 minute / till done.
  5. Serve as such / topped with chocolate chips, colored sugar / ice cream / chocolate sauce.

Recipe Notes

  • Whole wheat flour and cane sugar can be replaced with APF and regular sugar
  • Lemon juice can be replaced with vinegar.
  • You can do the mixing in the mug itself.I wanted small portions so mixed in a bowl and divided it in muffin liners.
  • This cake rises a lot so fill only till half of the cup / mug.
  • I used sunflower oil. You can use canola oil / rice bran oil or any other flavorless oil.
  • The cooking time will vary. Check after 50 seconds. It may take up to 2 minutes / more if baking as a single serve in a large coffee mug.
