A crispy cookie with coffee flavor and chocolate chips.
To the cookie dough add the coffee decoction/ black coffee and chocolate chip and mix gently to combine.If the dough looks sticky, add a little flour.
Roll out into 1/4 " thick disc and use a cookie cutter to cut the desired shape
Transfer onto a baking tray lined with parchment paper
Bake in a pre heated oven at 180 degree C for 8- 10 minutes.The baking time will vary on the thickness and size of the cookie. When the bottom of the cookie turns light brown remove from oven and cool on a wire rack
The cookie will be soft as soon it comes out of the oven but will turn crisp on cooling. So do not over bake it
Store in an air tight container after it cools down completely.
