Vegetable Kurma Recipe

A simple side dish to go with Indian breads

Ingredients

  • 2 cups Mix vegetables,chopped
  • 2 tablespoons Melon seeds
  • 1 teaspoon Poppy seeds
  • 1 number Onion,Chopped
  • 2 cloves Garlic, finely chopped
  • 1/2 teaspoon Ginger, grated
  • 1/2 inch Cinnamon, broken into bits
  • 1 number Capsicum,small
  • 1 teaspoon Red chili powder
  • Salt to taste
  • Coriander leaves to garnish

Instructions

  1. Soak the melon seeds and poppy seeds for a couple of hours. Drain and grind to a fine paste adding a little water. 

  2. Meanwhile parboil the vegetable, drain the water and keep aside.We can use the water used to cook the vegetables in the gravy.

  3. In a pan add a little oil and saute onion, garlic, ginger,capsicum toll the onion is soft. Now add the ground paste ,the vegetables.

  4. Add red chili powder,salt and a little of the reserved water used to cook the vegetables. Simmer for a couple of minutes and remove from heat.

  5. Serve garnished with coriander leaves.

Recipe Notes

  • Adjust the spice level to suit your taste.This one is very mildly spiced.
  • Sometimes I add one finely chopped tomato after the onions are sauteed and cook till it turns mushy.Then I add the ground paste.
  • Adjust the consistency of the kurma with the reserved water. Add less/ more according to your preference.
  • I usually use chopped carrots, beans, potato, cauliflower,peas.
  • 1 Teaspoon of garam masala can be added with the ground paste.
