A simple South Indian style dry curry.
Peel and chop the chayote squash. Microwave with just enough water till done. The vegetable should not get mushy.Drain the water and keep aside.
Heat oil in a pan and add mustard, cumin seeds, channa dal, broken red chilies and curry leaves.
Once the mustard pops, add the cooked chayote squash, turmeric powder and salt.
Give it a mix, add grated coconut and mix.Remove from heat and transfer onto a serving bowl.
