Ellu Holige Recipe | Sesame Filled Sweet Flatbread

Ingredients

  • 1 cup Whole wheat flour
  • A large pinch of salt
  • 1 teaspoon Oil
  • For filling
  • 1/4 cup Black sesame seeds
  • Jaggery powder to taste
  • Ghee to cook the Holige

Instructions

  1. Take the whole wheat flour and a big pinch of salt in a bowl and mix well. Add water little by little and knead to a smooth ,non sticky dough. Apply a little oil on the ball of dough, cover and keep aside till we make the filling.

  2. Roast the sesame seeds in a pan and when it starts popping, transfer it onto a plate to cool. 

  3. Take this roasted sesame seed and jaggery in a mixie jar and pulse a couple of times to powder both. Don't let the mixie run on high speed for long as it will become very sticky.Just pulse it a couple of times till you get a powder.

  4. Now, pinch out golf sized balls of dough and dust a little flour if needed and roll out into a small circle. Place 2-3 teaspoons of sesame-jaggery powder on it. The quantity depends on the size of the holige you will be rolling out.Bring the edges together and make a ball.

  5. Gently roll it out into a circle. Cook on a heated tawa , drizzling a little ghee on both sides. The holige puffed up like poori!!! Cook till brown spots appear on both sides. Remove from heat. Repeat for the remaining dough.

  6. Serve warm drizzled with ghee.

Recipe Notes

  • You can add coconutĀ  and cardamom powder while grinding the filling.
