Papad and Capsicum Stuffed Paratha Recipe

A papad and capsicum stuffed paratha that is simply delicious and so filling!

Ingredients

  • 1 cup Whole wheat flour
  • Salt to taste
  • 1 tablespoon Oil
  • For filling
  • 2 number Roasted Masala Papad
  • 1/8 cup each Tricolored capsicum,chopped
  • 1 number Onion,small, chopped
  • 1 tablespoon Chopped coriander leaves
  • A pinch Salt
  • 1/4 teaspoon Chili powder
  • 1/4 teaspoon Kalonji

Instructions

  1. Take wheat flour, salt in a bowl and mix well.Add water little by little and knead to a smooth non stick dough by adding a little oil at the knead. Knead and keep aside.

  2. Crush the roasted papad and keep aside. In a bowl take chopped colored capsicum,onion, coriander leaves,salt, chili powder,kalonji and mix.Keep aside

  3. Take a golf sized ball of dough and flatten it a bit.Place a tablespoon of the capsicum filling and top it up with some broken papad. Bring the edges together.Using a little flour to dust, roll out into 4" parathas. Cook on a heated griddle,drizzling oil around the edges if needed.Cook on both sides till brown spots appear.Remove from griddle.Repeat for the remaining dough.

  4. Serve with a side of your choice. I served it with masala raita.

Recipe Notes

  • I used Pepper flavored masala papad so added very little chili powder.
  • I microwaved the papad on high for a few seconds till done. You can also deep fry it and use
  • If tricolor capsicum is not available the regular green one can be used.
  • To make masala raita,beat curd with salt and add a masala spice mix of your choice. I used Garlic paruppu podi.Whisk and serve garnished with a few pinches of the same masala mix and chopped coriander.
