A simple and filling upma recipe with loads of bell pepper / capsicum
Heat oil in a pan and add mustard,cumin,channa dal, broken red chilies and curry leaves.
Once the mustard pops and the dal turns brown, add onion,grated ginger and garlic and saute till the onion turns soft. Put in the capsicum.
Saute for a minute.Let the capsicum retain the crunch.Add cooked quinoa and salt.Mix everything together and cook for 2 minutes on low flame for teh flavors to blend.Remove from pan and let it cool.
Serve as such / with a side of your choice
