Simple Bindi Masala [Dry] Recipe

A dry stir fry with ladies fingers that goes well with rice and roti.

Ingredients

  • 250 grams Bindi / Ladies Finger,chopped into 1" pieces
  • 2 numbers Onions,sliced
  • 1 number Tomato,chopped
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Red chili powder
  • A pinch Turmeric powder
  • Salt to taste
  • 2 teaspoons Oil, Divided

Instructions

  1. Heat oil in a pan and add oil. Put in the Bindi / ladies finger and cook till the ladies finger turns turn a little dark and almost cooked.Remove from pan and keep aside.

  2. Heat oil in the same pan and add cumin seeds.Once the seeds crackle, add onion and saute till onion is soft. Put in the tomatoes and cook till mushy.

  3. Add turmeric powder, red chili powder,coriander powder, salt and mix to combine. If it is too dry, add a little water.Now put in the ladies finger and mix gently.

  4. Keep the flame in low and cover and cook for a few minutes for the flavors to combine. Remove from pan and serve.
