Another version of the Christmas fruit cake that tastes exactly like the store bought one!!
To make the mince meat : Take the orange juice and grated orange rind in a pan. Add the dried fruit mixture.Cook the mixture
Add butter, cinnamon powder, brown sugar and mix well. When the fruits plump up and there is still some orange juice left, remove from heat. Store in a container and use as needed.
For the cake :For the cake - Take the flour, flaxmeal, sugar and cocoa powder in a bowl. Add salt, cinnamon powder, ginger powder and baking powder. Whisk well to combine.
In another bowl, take milk, oil, vinegar and the micemeat. Mix well.
Add this to the dry ingredients. Mix and transfer to a loaf pan. Top it up with more dried fruits
Bake in a pre heated oven @ 180 degrees for 45 minutes / till a skewer comes out clean when inserted in the center. Remove from pan and cool in a wire rack.
Slice and serve when it has cooled down completely.
