Mango Kulfi Recipe

A creamy and delicious Indian version of Ice cream / Popsicle

Ingredients

  • 1 tablespoon Corn flour
  • 1/8 cup Milk for slurry
  • 2 cups Whole milk
  • Sugar as needed
  • 1/2 cup Fresh cream
  • 1 cup Mango puree
  • Chopped nuts, a handful

Instructions

  1. Take corn flour in a small bowl and add mix. Mix well so that there are no lumps. Keep aside and mix well before adding to the recipe.

  2. Heat milk in a pan and bring to a boil, simmer and add sugar.Let it reduce a bit.Keep stirring once in a while.

  3. Mix the corn slurry and add to the pan. The milk will start thickening.Stir well. Add nuts.

  4. Mix and remove from heat.Add fresh cream, mango puree and mix well.

  5. Once it cools a bit, transfer to matka / earthen pots[top with more nuts], Popsicle molds, cover and freeze till set.

  6. Enjoy this delicious Mango Kulfi on a hot summer day!

Recipe Notes

  • Choose a sweet and less fibrous variety of mango
  • I used the cream that we collect after milk is boiled and cooled. Store bought cream can also be used
  • Adjust the quantity of sugar to suit your taste.
