Mango Kulfi Recipe with step by step pictures.
Kulfi or Qulfi is the famous Indian dessert that is loved by all which has its roots in the Indian subcontinent and popular all over Asia.
There are so many varieties and flavors that will really make the head spin!
One of the fondest memory relating to Kulfi is the one we, a group if college friends, had in Jaipur on our college tour. It was the tastiest and yummiest of all the Kulfis I have tasted so far.
I still remember us buying one each for just 5 bucks and the kulfi was almost like a meal to us that day! Yes, it was so big with a whole lot of almonds!
Any time I pick up a kulfi, at home or outside, this scene pops up first and I get all nostalgic!
So, coming back to the recipe of the day…
This Mango Kulfi recipe was prepared when the mango season was at its best! The past summer was too much to bear and to beat the heat we took in a lot of home made beverages and Popsicle.
To give the regular pospicle a break, I made this mango kulfi. Everyone at home [other than Lil dude and I] are huge fans of the king of fruits so thought this one will be loved by them all. The greatest surprise was that even Lil Dude who doesn’t like any fruit loved it to the core!Yes, it was so good!!
I froze them in Popsicle molds and in the earthen pots like the ones served here. The kids enjoyed the Popsicle version and the adults liked the matka kulfi.
I long while back, I had prepared Kesar Pista kulfi recipe, and we enjoyed it a lot. After that I kept making other varieties of Popsicle and never made this kulfi .[Do check out the 25+ Ice creams /Popsicle varieties on the blog.].So this year I went back to making many flavors of kulfi and this Mango kulfi recipe is one of those.
Step by step method of preparing Mango kulfi Recipe
Take corn flour in a small bowl and add mix. Mix well so that there are no lumps. Keep aside and mix well before adding to the recipe.
Heat milk in a pan and bring to a boil, simmer and add sugar.Let it reduce a bit.Keep stirring once in a while.Mix the corn slurry and add to the pan. The milk will start thickening.Stir well. Add nuts.
Mix and remove from heat. Add fresh cream, mango puree and mix well.
Once it cools a bit, transfer to matka / earthen pots[top with more nuts], Popsicle molds, cover and freeze till set.

Note:
- Choose a sweet and less fibrous variety of mango
- I used the cream that we collect after milk is boiled and cooled. Store bought cream can also be used
- Adjust the quantity of sugar to suit your taste.
A creamy and delicious Indian version of Ice cream / Popsicle
- 1 tablespoon Corn flour
- 1/8 cup Milk for slurry
- 2 cups Whole milk
- Sugar as needed
- 1/2 cup Fresh cream
- 1 cup Mango puree
- Chopped nuts, a handful
