Summer is in its peak and its time to have an ice cream or an Indian version of it like this Malai Kulfi!This Malai kulfi recipe is very simple and kids will love to have it.

Malai Kulfi Recipe

Malai means cream and this is a totally creamy and delicious indulgence! I first made this way back in the summer of 2018 and tried so many versions of Kulfi that was loved by all at home.

So after all these years, I have finally decided to post this simple Malai Kulfi Recipe.

Step by step method to prepare Malai Kulfi Recipe

Take corn flour in a bowl. Add milk and mix to form a slurry without lumps.Keep aside.

Heat milk in a pan and bring to boil. Reduce the flame and add sugar. Keep stirring often so that the milk does not burn. Once the milk reduces to half its quantity, add the corn slurry after mixing it once more.

The mixture will thicken after a few minutes. Keep stirring for another 5 minutes. Add finely chopped nuts, cream. Mix well.

Let it cool . Fill into moulds and freeze till set. Once ready to be served, remove from freezer and show under running water and remove the kulfi.[ I had set this in a kulfi mould as well as a popsicle mould.]

An indian version of creamy popsicle. So good for the summer time.

Ingredients
  • 2 1/4 cups Milk
  • 1 tbsp Corn flour
  • Sugar to taste
  • 1/4 cup Finely chopped nuts
  • 1 cup Cream, lightly whipped
Instructions
  1. Take corn flour in a bowl. Add milk and mix to form a slurry without lumps.Keep aside.

  2. Heat milk in a pan and bring to boil. Reduce the flame and add sugar. Keep stirring often so that the milk does not burn.

  3. Once the milk reduces to half its quantity, add the corn slurry after mixing it once more in the cup it was set aside in.

  4. The mixture will thicken after a few minutes. Keep stirring for another 5 minutes.

  5. Add finely chopped nuts, cream. Mix well. Let it cool a bit.

  6. Fill into moulds and freeze till set.

  7. Once ready to be served, remove from freezer and show under running water and remove the kulfi.[ I had set this in a kulfi mould as well as a popsicle mould.]

  8. Serve the creamy malai kulfi immediately.

Recipe Notes
  • You can add finely chopped dried fruits along with the nuts.
  • Cardamom powder[1/4 tsp] can be added when the milk is simmering.
  • Also saffron strands can be added before pouring the kulfi into the moulds.

    This malai kulfi happens to be my ever favorite summer treat! Absolutely loved it as a kid when then kulfi wala came with a bell at night. I remember the thin long slender kulfi mound that they used to shape them. I asked my father to send me those aluminum molds and I have to make this using them.

    Now that the girls are not here I can indulge in malai kulfi! They never like any milk items so when I make kulfi they are like sulking! Malai kulfi sounds awesome will try.
