A quick rice variety prepared with a flavorful spice mix
Heat a small pan.
Put in the pepper and cumin and roast on medium flame.
Once the cumin crackles switch off the flame and add curry leaves and saute for a minute.
Remove from heat and let it cool.
Powder this mixture and store in an airtight container and use as needed
To prepare the rice, heat a pan with oil
Add mustard ,urad dal, peanuts,curry leaves .
Once the mustard pops and the dal turns brown add the rice , salt and a couple of spoons of the spice mix we made earlier. Adjust the spice mix to suit your taste.
Mix and cook on low flame for a couple of minutes for the flavors to blend.
Remove from heat and serve as such or with raita / kurama/ fritters / chips
