We are always in search of easy rice recipes to add to our lunch menu or to pack for the lunch box. This one fits the bill perfectly!

A spice mix of Pepper , cumin and curry leaves is prepared and added to cooked rice. This spice mix can be made ahead and stored for a quick fix lunch .

This rice variety has to be a bit spicy to fully enjoy the dish. It can be served as such or with a mild Kurma / Raita / Firtters or chips.

A quick rice variety prepared with a flavorful spice mix

Ingredients
  • FOR THE SPICE MIX
  • 3 tsp Pepper / Milagu
  • 3 tsp Jeeragam / Cumin seeds
  • A handful Curry leaves
  • FOR THE RICE
  • Cooked rice
  • Salt to taste
  • 1 tsp Sesame oil
  • 1/2 tsp Mustard seeds
  • 1 tsp Split white urad dal
  • 1 sprig Curry leaves
  • 2 tbsp Peanuts
Instructions
  1. Heat a small pan.

  2. Put in the pepper and cumin and roast on medium flame.

  3. Once the cumin crackles switch off the flame and add curry leaves and saute for a minute.

  4. Remove from heat and let it cool.

  5. Powder this mixture and store in an airtight container and use as needed

  6. To prepare the rice, heat a pan with oil

  7. Add mustard ,urad dal, peanuts,curry leaves .

  8. Once the mustard pops and the dal turns brown add the rice , salt and a couple of spoons of the spice mix we made earlier. Adjust the spice mix to suit your taste.

  9. Mix and cook on low flame for a couple of minutes for the flavors to blend.

  10. Remove from heat and serve as such or with raita / kurama/ fritters / chips

Recipe Notes
  • I make small batches of this spice mix and store in the fridge and use as needed.
  • Add the spice mix to rice to suit your taste. Add less if you like it less spicy.
  • Use gingely oil / sesame oil for the best taste. In case it is not available use sunflower oil.
