Bread Rasmalai Recipe

A simple and quick Indian dessert prepared in a non traditional way!

Ingredients

  • 2 cups Milk
  • 2 tbsp Custard powder
  • 1/4 cup Condensed milk
  • A Pinch Saffron soaked in a tbsp of warm milk
  • Nuts to garnish
  • Bread slices as needed

Instructions

  1. Heat milk and condensed milk in a pan

  2. When it starts to boil, remove 1/4 cup from it and mix in the custard powder.

  3. Add this slurry to the boiling milk and simmer for 5 minutes / it till thickens a bit. Keep stirring to avoid lumps.

  4. Put in the saffron soaked milk and mix.

  5. Remove from heat and transfer to a vessel. Cover and let it sit in the fridge to chill.

  6. Using a cookie cutter / a bottle lid, cut out circles from the bread slices and keep it ready.

  7. When ready to serve, arrange the bread on a serving plate and pour the rabri over the bread and garnish with nuts.

  8. Enjoy the delicious bread rasmalai!

Recipe Notes

  • You can use corn flour instead of custard powder
  • Condensed milk can be replaced with sugar and 2 tbsp of milk powder.
  • You can leave out the custard powder and make this in the traditional way of simmering milk + condensed milk till it reduces to half. Since this is time consuming I went the custard powder way.
  • You can also lightly toast the bread before serving.
  • Do not pre-soak the bread. Assemble only when you are going it serve the dish else it will turn out very soggy.
