How to make Bread Rasmalai Recipe / Cheats Rasmalai recipe
Rasmalai is one of my favorite Indian sweets.I still remember my aunt getting this from Agarwal Sweets every time she visited us. She used to put it in the fridge as soon as she arrived.And I used to savor this chilled dessert after school.
I made Rasmalai for the first time for a cooking challenge .My nephews who had come here for their annual holidays loved it. But after that, I made it just a few times. During these blogging years, I am more towards trying out new dishes than repeating the old favorites! I am sure most of the bloggers will agree with this!
Anyway, this is my post for Blogging Marathon #118, Week 2, Day 3 under the theme – Diwali special recipes.
If you had noticed the first line of this post, I have mentioned it to be a cheats version because I prepared this in the easiest way ever.
I did not wait for the milk to reduce but still,as you can see in the pic,the rabri is thick and delicious!The secret is that I used a little custard powder to get the thick and creamy consistency!
These day I am so pressed for time that I look for all the shortcuts so that the cooking time is less but we can still enjoy the delicious dishes,
Now let us see how to prepare this Bread Rasmalai Recipe
A simple and quick Indian dessert prepared in a non traditional way!
- 2 cups Milk
- 2 tbsp Custard powder
- 1/4 cup Condensed milk
- A Pinch Saffron soaked in a tbsp of warm milk
- Nuts to garnish
- Bread slices as needed

Heat milk and condensed milk in a pan

When it starts to boil, remove 1/4 cup from it and mix in the custard powder.

Add this slurry to the boiling milk and simmer for 5 minutes / it till thickens a bit. Keep stirring to avoid lumps.

Put in the saffron soaked milk and mix.

Remove from heat and transfer to a vessel. Cover and let it sit in the fridge to chill.

Using a cookie cutter / a bottle lid, cut out circles from the bread slices and keep it ready.

When ready to serve, arrange the bread on a serving plate and pour the rabri over the bread and garnish with nuts.

Enjoy the delicious bread rasmalai!
- You can use corn flour instead of custard powder
- Condensed milk can be replaced with sugar and 2 tbsp of milk powder.
- You can leave out the custard powder and make this in the traditional way of simmering milk + condensed milk till it reduces to half. Since this is time consuming I went the custard powder way.
- You can also lightly toast the bread before serving.
- Do not pre-soak the bread. Assemble only when you are going it serve the dish else it will turn out very soggy.
