I started the diwali preparations very late. In fact, I have just started the planning part today! So in times like this, this Instant Rabri / Rabdi recipe comes in very handy!
I still remember mom and grandmom starting the diwali preparation a week ahead. They would get the flour milled and source out all the ingredients required for the sweets and savories.
A list of dishes would be made and yet another list for all those to whom it would be distributed to. Smaller quantities of the family favorites would be made too and I would drool over just by thinking about all that was in store in the coming week.
As the days went by, our lives got busier and I prefer a lot of quick fix dishes that gives the satisfaction of having the real deal in lesser time. This is one such.
Rabri or Rabdi is a thick and luscious Indian dessert that is made with milk that is simmered for quite sometime to get a thick consistency with layers of cream.
But here we are going to use condensed milk to make the process quicker and easier. Instead of the cream layers we are using paneer to get a similar texture and cooking this mixture in the microwave gives us an instant decadent dessert!

Here is how to make this super quick Instant Rabri / Rabdi recipe:
A quick method to prepare the luscious Indian dessert in the microwave!
- 1 cup Milk
- 1/2 cup Condensed milk
- 1/2 cup Grated paneer
- 1 tbsp Badam Milk Mix
- 1 tsp Ghee
- Chopped nuts, dried rose petals to garnish

Take all the ingredients in a microwave proof vessel and mix well.

Microwave on high in bursts of 2 minutes for 6 minutes, stirring between each cook time.

Remove from the microwave and set in the fridge to cool

Serve garnished with nuts and dried rose petals..
- You can use a few strands of saffron soaked in warm milk, cardamom powder instead of badam milk mix.
I just finished making rabdi in the traditional way. Your instant one looks equally welcoming and delicious.
The traditional rabri does take a while to cook and this instant method is so helpful! So quick and I don’t see much difference in flavor and texture.
