Eggless Marshmallow Cupcake Recipe

Ingredients

  • 3/4 cup Whole wheat flour
  • 1/2 cup Powdered Sugar
  • 1/2 cup Yogurt
  • 1 tablespoon Cocoa Powder
  • 1/4 cup Chocolate chips
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Baking Soda
  • 1/2 cup Oil
  • 9 numbers Marshmallows

Instructions

  1. Sift whole wheat flour and keep aside. In another bowl, take yogurt and sugar. Whisk till sugar dissolves.

  2. Add baking powder, baking soda and mix. After a few minutes, it will turn frothy.

  3. Add oil and mix. Slowly add the sifted flour little by little and make a lump free batter.Add chocolate chips, cocoa powder and mix to combine but do not over mix.

  4. Line a muffin tin with paper liners and pour the batter to 1/2 the level.Stick in a marshmallow into each liner and top with with a little bit of batter.Bake in a pre heated oven at 180 degrees for 15 minutes or till a skewer inserted in the center comes out clean. Cool on a wire rack .

  5. Delicious cupcakes are ready to be savored.

Recipe Notes

  • Use any batter of your choice.
  • I used strawberry flavored marshmallow.
  • You can also place the marshmallow in the center of the cupcake batter to get a surprise inside cupcake.
