Eggless Marshmallow Cupcake Recipe was born out of an experiment! Watching too many baking videos especially ones with marshmallow wanted me to use up a bag of these in a simple way without much hassle. I tried with a small portion and they turned out great and the kids loved it.Hence it finds its place on the blog!
This is fairly simple to prepare. I used a chocolate chip loaded chocolate cake batter. You can use any batter that you prefer or the ones that you are comfortable with.
The marshmallow can be sort of ‘buried’ in the batter so that it forms a surprise inside cake or can be place a little on top so that it peeks out from the cake which gives it a beautiful look!
Do try it out and I am sure you will fall in love with it!
Step by step method to prepare Eggless Marshmallow cupcake Recipe
Sift whole wheat flour and keep aside. In another bowl, take yogurt and sugar. Whisk till sugar dissolves.
Add baking powder, baking soda and mix. After a few minutes, it will turn frothy.
Add oil and mix. Slowly add the sifted flour little by little and make a lump free batter.Add chocolate chips, cocoa powder and mix to combine but do not over mix.
Line a muffin tin with paper liners and pour the batter to 1/2 the level.Stick in a marshmallow into each liner and top with with a little bit of batter.Bake in a pre heated oven at 180 degrees for 15 minutes or till a skewer inserted in the center comes out clean. Cool on a wire rack .
Delicious cupcakes are ready to be savored.
Note:
- Use any batter of your choice.
- I used strawberry flavored marshmallow.
- You can also place the marshmallow in the center of the cupcake batter to get a surprise inside cupcake.

I haven’t so many smores cupcakes on Instagram and I wanted to try them. Looks like you made them first. The addition of the surprise element in the cup cake makes it too inviting.

Mallows just melts into the cupcakes making it ooze out when you have it. I just love it.

I only ever use marshmallows to put in hot chocolate but i think it would be a great addition to cupcakes

Interesting to see marshmallows used in cupcakes. I have till now used for making rice Krispies, in hot chocolate or icing.. well try this way too!! the marshmallow cupcakes look so colorful and beautiful.
