A simple one-pot meal.
Heat oil/ghee in a small pan, fry the cashews, and keep aside.
Wash and soak rice for 10 minutes. Drain and keep aside.
Heat oil/ghee in a pressure cooker and put in cumin seeds, peppercorns, cloves, and cinnamon. Saute for a few seconds.
Add onion and cook till soft.
Add carrot, peas, pulao masala, and mix well.
Add water and let it come to a boil.
Add salt and when the water comes to a rolling boil, add rice.
Cover and pressure cook for 4 whistles / the regular time you usually use to cook rice. Let the pressure release naturally. Open the cooker and fluff up the rice.
Serve garnished with fried cashews
