Carrot and Peas Pulao Recipe with step by step pictures.
A simple one pot-pot meal is the final recipe in Blogging Marathon #130, Week 4, Day 3, where the theme is the A-Z series and my theme is Rice-based dishes.
I used to make this regularly for the kids’ lunch box. Both Carrot and green peas are the kid’s favorite and there is no complaint! Also, this is so quick to prepare that it does not add pressure to the morning rush. Now I rarely make this as there are no more packing lunch boxes and the kids are used to a full meal now.
Let’s see the step by step method to prepare Carrot and Peas Pulao Recipe
Heat oil/ghee in a small pan, fry the cashews, and keep aside. Wash and soak rice for 10 minutes. Drain and keep aside.
Heat oil/ghee in a pressure cooker and put in cumin seeds, peppercorns, cloves, and cinnamon. Saute for a few seconds. Add onion and cook till soft. Put in carrot, peas, pulao masala, and mix well. Next, add water and let it come to a boil.
Add salt and when the water comes to a rolling boil, add rice. Cover and pressure cook for 4 whistles / the regular time you usually use to cook rice. Let the pressure release naturally. Open the cooker and fluff up the rice.
Serve with raita and some crisps, garnished with fried cashews.

Carrot and Peas both lend such pretty colours , along with the nutrition to this rice . I love the idea of adding cashews to the rice to add in some crunch and that nutty flavour. Good one PJ.
