Summer is odd! This statement cannot be surprising since it comes out from a person who loves winter!! When summer arrives, I hardly can keep track of the time. I mean, I wake up thinking it 7am just to find it’s hardly over 5.30am but the sun is already up and shining. When I go out I still feel time flies, unlike winter! I may sound weird but that’s how summer is to me!
Anyways,one summer day, we [a few friends and me] decided to go shopping and when we reached the mall we were super excited to see all the stuffs and never realized how fast the time flew. It was well past lunch time and we hurried home carrying our booty.
In no mood to eat out, I came home and opened the refrigerator .I saw a cob of [boiled] corn. With it out came a packet of spinach. I patted my back for I had already put the rice to steam in the rice cooker before I left [and planned to cook the dishes later].
So this corn and spinach joined hands with steamed rice and a few spices to give a yummy and filling dish. Oh, by the way, it’s nutritious too.
Here is what I did:
2 teaspoon oil in a pan and put in 1 teaspoon mustard, 3 red chillies, 1 teaspoon ginger garlic paste,1 small onion ,chopped
and sautéed till onion is transparent.
Put in
1 bunch chopped spinach
and cover and cook for a few minutes.Sprinkle a little water if required.
Put in
a fistful of boiled corn,1 teaspoon sambar powder,salt,
and stir to mix.
Add
1 cup cooked rice
and mix well.Sprinkle a little water if it is too dry.
Simmer, cover and cook for 2 minutes.
Remove from heat and serve hot with a crispy of your choice.

Looks delicious, I use sambar powder in mixed rice once in a while too, and love how it tastes !
