Arroz Blanco is a kind of flavored steamed rice from the Dominican cuisine.It goes with anything- eggs, stews, meat and vegetables. Flavorings like garlic,coriander,onion, pepper and some spices may be added.What I made is a simple version of cooking rice with garlicky oil.Sometimes none of these are used and rice is cooked by adding olive oil only [while cooking the rice].
I used:
Rice- 1 cup
Garlic- 3 large pods,lightly crushed
Olive oil-2 teaspoons
Water – 2 cups / the quantity that you normally use
Salt to taste
Coriander leaves to garnish
- Heat the olive oil in a pressure cooker.
- Add the garlic and fry till it turns brown.Remove the garlic and discard it.
- Add water to the vessel carefully[it will splutter] and when it comes to a rolling boil, add the washed rice and salt.
- Cover and cook for 10 minutes or till done.
- Serve garnished with coriander leaves.
This salad was a part of the meal that I showcased for the Dominican Republic, which is a part of the 30 day culinary tour across the globe .Along with this was served Habichuelas Guisadas [Stewed beans] and Potato with yogurt dressing.

Sometimes lightly flavored rice goes very well with any side dish. Simple at flavorful.
