It was as though the A-Z International Mega Marathon just got over, and here we are into the next edition of the regular Blogging Marathon! For the 45th edition, week 1, I have chosen North Indian sides that go with Roti/Rice.
The first on in this is Paneer Lababdar. A few month ago, many of our blogging marathon members made this dish and it had raving reviews by the family. That was enough to tempt me to make it. This was prepared a little after they had made it and as usual,out it down in my drafts waiting for the perfect moment to post it…
This is a simple side dish that tastes really awesome and perfect for the lunch box and a party. A ground paste is used here and this can be made ahead and refrigerated.
Lil Angel loves paneer and Chapathi.So when she wants this combo,I make the paste the previous night and in the morning just bring all the other ingredients together and the dish in done in 10 minutes!

Paneer cubes
Corn flour- 1 tablespoon
Milk-1 cup
Garam masala-1 teaspoon
Salt to taste
Coriander leaves to garnish
For the masala paste
Onion-1, roughly chopped
Tomato-1,chopped
Coriander seeds- 1 teaspoon
Cumin seeds-1/2 teaspoon
Finely chopped ginger and garlic-1 teaspoon each
Kashmiri red chili powder- 1 teaspoon
Kasuri methi-1 teaspoon
Turmeric powder- a large pinch
Oil- 1 teaspoon
Mix corn and milk and keep aside
Heat oil in a pan and add the onion, garlic, ginger, coriander seeds,cumin seeds, chili powder, kasuri methi and saute till onion turns soft. Add tomato and turmeric powder, half cup water and cook till tomato is mushy. Remove from heat and let it cool a bit. Grind to a fine paste without adding water.You can store this in the refrigerator the previous night if planning to make this for the lunch box the next day.
Transfer the paste into a non stick pan and add the milk mixture, salt and garam masala. Add the paneer cubes and simmer for 5 minutes / till it thickens a bit.Remove from heat and serve garnished with coriander leaves
I made this on a weekend and served it with Masala Pooris
Anything with paneer is always well liked. This one is pretty spicy.
