It has been cold and drizzly outside for the past couple of days. All one wants to do is curl up on the couch and watch something on TV while all the house work gets done magically.I can only wish this happens.
But when we are sure something like this is never going to happen, it is nice to get cooking something tasty and best if we get down to baking something warm and delicious.
Last evening I set aside my laziness of wanting to sit and watch back to back episodes of one of my favorite TV shows and got down to baking this delicious loaf of Banana quick bread.
It has been a while since I baked anything and I knew the kids would be excited. When they came back from school they guessed correctly that something was in the oven and the kids could not wait to take a bite.
This is one of the easiest and tastiest bread I have ever baked and it is a keeper for sure. I have adapted this recipe from Veg Recipes of India and made a few changes to suit my taste.
I have used coconut blossom sugar for the sweetener and added chocolate chips to please the kids which can be avoided if you are looking for a vegan quick bread.
The best part of this quick bread is that it is made of whole wheat flour, has bananas and chocolate chips, vegan ,soft texture and extremely addictive!!!
We finished the loaf within a couple of hours and kept aside just 2 slices to share with my parents!So that does say how tasty it was!!!
This goes to the Recipe ReDux group where the theme this month is Creative quick breads.I am not sure how creative this !All of my bakes are eggless and I use yogurt or milk or butter in them but here I have made a vegan version and also happens to be a dairy free one [if you leave out the chocolate chips] and also I have used coconut blossom sugar for the first time in baking.So in my terms I would count these as being creative ๐
I used:
Adapted from – Veg Recipes of India
Whole wheat flour – 1 1/2 cups
Banana – large [Iused Morris variety]
Coconut blossom sugar- 1/2 cup
Vegetable oil – 1/2 cup [I used sunflower oil]
Baking powder-1 1/2 teaspoon
Baking Soda- 1/2 teaspoon
Vanilla essence – 1 teaspoon
Salt- a large pinch
Chocolate chips – 1/4 cup[ optional / leave out for vegan version or use chopped nuts/ use vegan chips if available]
Roughly chop the banana and take in a blender and add coconut blossom sugar and puree.
Transfer this onto a bowl and add oil and vanilla essence and give it a mix.
Sift together flour, baking powder, baking soda, salt right over the wet ingredient bowl.Add the chocolate chips and mix well to combine. Pour into a greased loaf tin and give it a good tap on teh counter top. Top with a little more chocolate chips. Bake in a pre heated oven at 180 degree C for 25 minutes or till a tester inserted in the center comes out clean.[The timings will vary. check after 20 minutes and bake accordingly]
Once done, remove from oven. After a few minutes, remove from loaf tin and allow to cool on a wire rack. Once cooled, slice and enjoy.
Note:
You can use regular sugar/ palm sugar/ jaggery instead of coconut blossom sugar.
I've never tried coconut blossom sugar, but I think I need to! This recipe sounds so tasty!
Sounds delish to me! Intrigued by coconut blossom sugar or is that the same as coconut sugar? (sounds much lovelier with blossom in the name ๐
