When there is left over rice, the first thing that comes to mind is to make some flavored rice with it. The addition of vegetables, Paneer, cheese etc not only transforms the left overs to a delicious dish but also adds to the color and nutrition of the dish.
Here is one such dish that is so simple to make ,yet looks delicious and colorful on the table.
I used:
Cooked rice- 2 cups
Chopped purple cabbage – 1/2 cup
Onion,sliced- 1
Kalonji / Nigella seeds- 1/2 teaspoon
Pav Bhaji masala- 1 teaspoon / adjust to taste
Amul cheese cube-1, cut into small pieces
Amul cheese cube- 1, grated
Salt to taste
Oil-1 teaspoon
Heat oil in a pan and add the nigella seeds.After a few seconds, add the onion and chopped cabbage.Saute for a couple of minutes till the cabbage is almost cooked, yet has a light crunch.Add the cooked rice and salt.
Add the pav bhaji masala , and grated cheese and mix well. Cook for a couple of minutes on low flame for the flavors to blend. Finally, add the chopped cheese, give a quick mix, and remove from the pan.
Serve as such or with yogurt/ raita and some chips.

Purple cabbage is quite hard so I have never thought of using it in rice , but I would like to try this version which looks nice and colorful .
That is a great way of serving left over rice..
With cheese in there I am sure the kids will love it.
