This simple vegetable and peanut rice is one of my go to dishes, be it for a quick lunch or to pack for the kids lunch box.
This is not only healthy but also delicious and colorful enough for the kids to eat it without complaint. The kids are huge fans of peanuts so this rice is one of their favorite lunch box dishes.
This rice dish need no extensive ingredients and the pre-prep like cutting veggies, boiling the peanut can be made ahead so that this dish can be rustled at the drop of a hat!
How to make Simple Vegetable and Peanut Rice
I used :
Raw peanuts- 1/2 cup
Rice[uncooked]- 1 cup
Mixed vegetables- 1/2 cup, chopped and boiled
Onion-1, sliced
Mustard-1 teaspoon
Urad dal- 1 teaspoon
Channa dal- 1 teaspoon
Curry leaves- a few
Any lentil based spice mix[podi] of your choice- 2-3 tablespoons / to taste [See note below]
Salt to taste
Oil – 1 tablespoon
Cook the rice as you normally do and spread it on a plate to cool.
Soak peanuts for an or two and pressure cook with enough water and a little salt.Drain and discard the water used to cook it. Keep the cooked peanuts aside.
Heat oil in a pan and add the mustard, urad dal and channa dal. Once the mustard pops and dal turns brown, add the curry leaves and onion. Saute onions till soft and add the cooked vegetables and boiled peanuts.
Then add the cooked rice,salt, your choice of spice mix.Mix well and let it cook on low flame for a minute or two.
Remove from pan and serve with a side of your choice.
Note:
- You can use any podi / spice mix like Pumpkin seed paruppu podi / Idli milagi podi / Quinoa Paruppu Podi or even give it a twist by adding Pudina [mint] paruppu podi.
- You can also use garam masala/ pav bhaji masala etc.
- Adjust the powder / podi to suit your taste.
- Vegetables like sweet corn, cauliflower, potato, peas can also be added.

lovely pj, i have never tried adding whole peanuts, though have added as garnish to poha and all, but with rice i make sure it is coarsely powdered! Will try this sometimes! Thanks for sending it to Kids delight 🙂
