My initial plan for this month was to prepare dishes that could be part of the every day meal. Then it struck me that healthy cakes will an added benefit for the mom as well as the kids.
I had a few cakes and cookies using millet flour but went ahead with this easy and pillowy cake recipe that can be made in a sandwich maker!
I used the eggless whole wheat pillow cake recipe as the base and modified it by adding Ragi / finger millet flour.
Here is how to prepare Eggless Ragi Chocolate Pillow Cake Recipe
I used:
Whole wheat flour -1/2 cup
Ragi flour-1/2 cup
Cocoa powder-3 tablespoons
Salt – a large pinch
Unrefined cane sugar- 1/2 cup
Milk- 1/2 cup
Hot water- 1/4 cup[if needed]
Baking powder- 1 teaspoon
Baking soda- 1/2 teaspoon
Oil- 1/2 cup
Tutti frutti – a handful
Step by step method to prepare Eggless Ragi Chocolate Pillow Cake Recipe
Take the ragi flour,whole wheat flour,cocoa powder,salt in a bowl and mix well.
In another bowl , take the unrefined cane sugar, oil ,milk and mix till the sugar is fully dissolved.Add the flour mixture.
Put in baking and baking soda.Give it a mix so that there are no lumps. Add tutti frutti.If the mixture is too thick, add a little hot water and bring it to a cake batter consistency.
Heat a sandwich maker and pour the batter into the plates. Cook till done/ when a tooth pick comes out clean when inserted in the center. Once done, let it cool a bit before attempting to remove it from the plates.
Serve drizzled with chocolate sauce.
Note:
- Do not remove the pillow cakes as soon as they are done. It will stick to the plates. Let it cool down and remove it gently.
- I did not grease the sandwich plates.
- You can use the regular sugar/ brown sugar/ jaggery instead of cane sugar.
- Do not add the hot water in one go. You may / may not need all of it. Add little by little till you get the right consistency.

I used to make pillow cakes for Sruit, but somehow stopped doing it now. The addition of ragi in the batter will give it a nice flavour and ragi is so easy to sneak in chocolate cakes. Kids won’t even notice it.
I have never made pillow cake in the sandwich toaster. This is such an interesting idea and addition of ragi flour makes this cake more healthy too.
I was left starring at the pillow cakes… brilliant. I would have never thought of using the sandwich maker making cakes!
