Eggless Rose Pistachio Cookies Recipe with step by step pictures
‘Baking is therapeutic’ – Well, that is what I have read / heard about! But that does not happen often around here.
Let me tell you something! It has been a year since I switched on the oven! The oven that I so loving got when I was pregnant with lil Angel and the one that was constantly switched on to bake a variety of eggless cakes and eggless cookies and one that has made me earn a good name among my folks for being the ‘baker’ of the family because I baked a few loaves of breads and buns,was put into a hibernating mode for the past one year!
Suddenly I lost the interest to bake! I did not even touch the oven. All the things related to baking – pans, cookie cutters etc hibernated along with it.
Then Srivalli announced the Bakeathon, the yearly event where a group of bloggers bake and post on alternative days throughout the month of December.
I was still not pulled into it as I thought I will not have the interest to bake. I casually mentioned this to my kids and they went berserk! They were excited for the event but felt very let down as I did not show interest in baking!
Then the WhatsApp discussion on this topic tempted me so much that I left the lazy girl mode and made 2 dishes yesterday and my kids were jumping with joy!
They have a request lined up and most probably that will all get baked. So while you may find beautiful cakes and exotic cookies in all the social medias this holiday season, you will see the stuffs that my kids wanted me to bake and hastily clicked baked on my blog.
So the BM’ers have pulled me into this by tempting me with all their baking ideas and discussions and the first recipe that I am posting for this event is this Eggless Rose Pistachio Cookies Recipe.
I have an eggless basic cookie dough recipe that I have made use of this time too . With this dough, it is possible to create tons varieties of cookies and they taste so delicious!!
I used 3 cups flour and got around 900 grams of cookie dough. I divided into 5 equal portions – 180 grams each which I have used for 5 different cookie recipes.
Step by step method to prepare Eggless Rose Pistachio Cookies Recipe
Take the cookie dough , chopped pistachio, dried rose petals, rose essence in a bowl and mix gently to combine. Roll out into a sheet of 1/2 cm in thickness. Using a cookie cutter ,punch out cookies of desired shapes.
Transfer onto a tray lied with parchment paper. Gather the remaining dough and prepare cookies. Bake in a pre heated oven at 180 degree C for 10 minutes / till the edges turn light brown. I baked mine for a few minutes longer so they got a little browner. Transfer onto a cooling rack.Store in an air tight container once cooled.
Crispy rose flavored cookies with pistachio is ready to be savored!
Note:
- I used only a few drops of rose essence. Depending on the brand/ flavor, adjust the quantity to suit you taste
- Similarly adjust the dried rose petals to suit your taste
- The cookies will be soft as soon as they are bakes. It will turn crunchy once it cools down.
- The yield will depend on the size of cookie cutter used.
- The baking time will vary depending in the size and thickness of the cookie.
A crunchy rose flavored cookies with pistachios

- 2 tablespoons Finely chopped Pistachio
- 2 teaspoons Chopped Dried Rose Petals
- A few drops Rose Essence
