This Appakka Bonda | Madurai Bonda Recipe is said to be one of the famous snack items from the Temple city of Tamilnadu – Madurai.
Though I have not tasted it in Madurai, I found a few sites that have the recipe and decided to make it at home.
This Bonda recipe uses Refined flour, rice flour, and sour curd along with some seasonings. On my first try, I forgot to add sour curd and the bonda did not taste all that good. I was highly disappointed! Next time I made sure to use sour curd in the mixture and it turned out just as crisp and perfect just like the ones I had seen/read in the other posts.

I used:
- All purpose flour – 1 cup
- Rice flour – 1 cup
- Slightly sour curd – 1 cup
- Curry leaves- a few
- Red chili powder- 1 teaspoon
- Asafoetida powder -a large pinch
- Cumin seeds- 1 teaspoon
- Salt to taste
- Oil to deep fry
Method of preparing Appakka Bonda | Madurai Bonda Recipe
- Take all the ingredients [except the oil] in a bowl and mix well .Add water little by little to get a batter without any lumps. The batter is a little thicker than the Ulundhu vadai / Urad dal vada batter.
- Heat oil in a pan and drop in spoonfuls of batter into the oil. Do not overcrowd the pan.
- When the bonda turns golden brown, remove from oil.
- Serve the crispy bonda as such or with chutney
